Castle Hotel & Spa in Tarrytown, N.Y., is celebrating summer with its third annual Poolside Summer Pairing Series. The more than 100-year-old castle overlooks the Hudson River and takes attendees back in time, with suites that feature wood-burning fireplaces. This summer, attendees can also experience that history poolside, while enjoying tastings of wine, spirits and delicious food from the on-property Equus restaurant.
Equus is known for using locally sourced ingredients in its Auberge-style French menus, normally offered in the restaurant’s three dining rooms: the Garden Room, Oak Room and Library. Held every Thursday from June 30 until Aug. 18, the pairing series will take place from 6:30 p.m. to 8:30 p.m. and features music by EV Band. The series will feature wine and spirits from all over the world that mix well with the area’s summer flavors. Menu highlights include smoked cantaloupe jam with house-made biscuits and roasted peach soup. Here is the summer event schedule:

The property can arrange a private poolside event for groups looking to experience summer apart from the pairing series. Its 3,300 sf of meeting space is also designed with high-tech technology alongside crystal chandeliers and intricate vaulted ceilings. The Great Hall features original Gothic windows with heraldic motifs, while artistic moldings encircle the Caramel Ballroom.
