Cook with the fine dining chefs
The 96-room Capella Pedregal in Cabos San Lucas, Mexico is exclusively accessed through an 384-foot mountain tunnel, which takes groups into a world of ocean elegance and Mexican flair. The 24-acre resort features three restaurants, four pools, a beach club, an expansive courtyard and 725 sf of meeting space. Popular events include interactive meals at El Farallon restaurant.
Farallon in Spanish means “a rock that comes out of the ocean.” El Farallon is situated cliffside over the Pacific Ocean, where the local catch rests on mounds of shaved ice. Beside it, an antique scale weighs each catch and the selection of the day is handwritten with chalk onto a blackboard. Various selections from the catch are displayed on ice in El Farallón’s market-style fish display, accompanied by local experts available to answer the group’s questions.
After the group makes their selection, the seafood is bagged and sent directly to the chef to be prepared on an open char grill. As the meal cooks, the grill spreads the charred aroma and the pungent flavor throughout the open air restaurant.
Capella Pedregal hosted “A Taste of Capella” food and wine festival earlier this year, showcasing Cabos fresh and innovative cuisine with celebrity and local chefs. We spoke with Dawn Benedict, national group sales manager, to learn more about Capella Pedregal’s group programs.
PREVUE: Can you tell us about the hotel location and its unique qualities?
Dawn Benedict: The hotel is a hidden gem in Cabos San Lucas. Cabos sits on two bodies of water: The Sea of Cortez and the Pacific Ocean. We are located on the very southern tip of the California Baja, right on the Pacific Ocean. We are located on Pedregal Mountain, which is very lovely, high-end real estate in Cabos. The development of the land goes right to the water, but owners didn’t originally have access to it because of the mountain in the way. In 1999 the owners decided to blow a tunnel through the mountain to get to the Pacific Ocean on the other side where the hotel was built. The hotel is made up of several buildings that all look out to the water. Every guestroom has its own view of the sparkling sea they all have their very own plunge pool on the balcony. The water and views are just amazing.
How does the hotel use its location it its advantage?
The city of Cabos San Lucas is walking distance from the tunnel. You’ll have easy access to all of the dining, entertainment, shopping and nightclubs that Cabos is known for. For groups, it saves major budget dollars because they do not have to spend any money on transportation to offsite venues—they can literally walk there. That’s really what sets us apart; we are the only luxury 5 Diamond hotel that is walking distance from the city since all the other hotels sit along the corridor on the Sea of Cortez.

What is the look and vibe of the resort?
The hotel was designed to have a real sense of being in the Baja where the desert meets the ocean. From the architecture, to the hand crafted details in the rooms by local artisans, to the cuisine and spa treatments, all reflect our area and give guests the chance to experience the Baja and the local culture.
The hotel is very indigenous to the Mexican culture with a large amount of pottery and artwork around the hotel. There are beautiful torch lit walkways under the stars and it’s all open and very airy. You can purchase all of the unique pottery and art that you’ll see throughout the hotel in the onsite retail store, which makes for great take home gifts for the group.
